Eric Pan’s journey through hospitality is a story of creativity, connection, and a passion for pushing boundaries. From curating world-class wine lists in London to crafting innovative cocktails at an award-winning bar, Eric approaches his craft as a way to bring people together and tell stories through hospitality.  

In London, he refined his expertise as Senior Sommelier for the Gordon Ramsay Group, where each wine pairing elevated the dining experience. At KOL Restaurant & KOL Mezcaleria, he found a platform for his creativity, blending bold ideas with tradition. During his time there, KOL earned its first Michelin star and a spot on the World’s 50 Best Restaurants list, reflecting the team’s excellence and Eric’s dedication to innovation.  

When Eric returned to Toronto, he brought with him a vision inspired by global experiences. He opened Slice of Life, a cocktail bar rooted in inclusivity and sustainability. Each drink is a celebration of local producers who champion eco-friendly practices, transforming simple, fresh ingredients into creative, memorable cocktails. At Slice of Life, Eric’s team is empowered to express their artistry, creating experiences that feel both personal and meaningful.  

Beyond his own ventures, Eric is committed to shaping the future of the industry. He founded Tunnel Vision, a hospitality group designed to help local talent thrive. Through sourcing private funding and offering guidance in pre-opening and ongoing management, Eric is building a bridge for others to follow their dreams in hospitality.
