Bar Director, Bar Pompette

Born and raised in Alsace, Hugo Togni started his career in hospitality as an inspiring chef training  with prestigious chefs such as Jean-Georges Klein and Olivier Nasti in Multi-Michelin Stared  restaurants. 

A couple of years later, Hugo discovered himself a passion for everything bartending and realised he  did enjoy having more contact with customers thus his move form back of the house to the front of the  house setting his stage and shakers behind the bar counters. 

Following a few years in France, Hugo decided to travel to Australia to get some international  experience followed by a move to Canada late 2019. 

There he joined force with Maxime Hoerth, fellow Alsatian and MOF Barman, that was opening  Pompette Restaurant, and assisted him in creating and running the cocktail program there. 

In 2021, feeling that the Pandemic was slowing down, they decided to open together Bar Pompette, a  specialized Cocktail Bar in Toronto exploring more in depth their common vision of the cocktails  using modern culinary techniques to extract and develop a one-of-a-kind yet very accessible  contemporary cocktail program that quickly gain them local and international attention and  recognition. 

Those days, you will find Hugo running the bar operations in Toronto or travelling the world to explore  new territories and participate to bar exchanges to represent Bar Pompette overseas.
