Awards winning bartender (MOF Barman 2011), consultant, book author and veteran of the french bar scene (Bar Manager of Four Seasons Hotel GeorgeV and Le Bristol Paris), Maxime has recently made a name for himself on the Canadian scene as co-owner and founder of Pompette Group in Toronto consisting in Restaurant Pompette and Bar Pompette (both acclaimed and award winning locations, Best New Restaurant, Canada 100 Bests, 50 Best Bars...) as well as Bakery Pompette and Pelican Wines agency. Benefiting from 15+ years of experience in Europe and North America, Max’s insight and good knowledge of the local and international bar scene helps him curate the Bar Program of the Restaurant where he still shake and stir drinks, while co-managing Bar Pompette specialising in vision and strategic development of the bar. Max is also in charge of Pelican’s spirit selection. His goal is to bring in unavailable or underrepresented spirits to the Ontario Market so to help further develop the bar scene by providing new tools for bartenders and bar owners. Although he likes to keep a rather low profile, and likes to see his partners shine, he aims to develop his teams and projects to create some of the most exciting Canadian bar experiences with creativity and guest well being always at the center of the experience. You'll find him most of the time running between the different locations or brain-storning on future projects and ideas to develop.
